I’d like some couscous, please.

One of the things I really miss on low-carb that I grew up with is couscous.  We used to have that or polenta for breakfast, with some pasta sauce and a few pine nuts on top.  Sounds weird to you, maybe, but it was tasty!

Dr. Mary Dan Eades posted a restaraunt knock off recipe she made, and I’m dying to try it.  I’m going to next week, if all goes well.  She must have read my mind this week!

I haven’t eaten a large meal yet today.  Had two eggs + three egg whites scrambled with canadian bacon and some vegetables, roasted, for breakfast.  Saved some of the eggs I wasn’t hungry enough to eat.  Later I’ll be making a cabbage and beef stir fry.  I know cabbage often invokes a horrified response.  I make it with garlic, celery salt, onion, and a buncha other stuff.  Sometimes I fry it in a few tablespoons of butter and olive oil that I melted anchovies in first.  Yum!  Good stuff!

In other news, 371.1 pounds today.

Checking In

Weighed myself today: 371.1 pounds.  I have no idea where the other pounds went.  Probably just part of my normal daily fluctation, rather than pure fat loss.  I’ll use a fitday account to track it from now on, so the statistics can be easily referenced later.

Ate two meals, semi-small.  Will probably have one snack before bed.  The hot and humid midwest summers make for me not having too much of an appetite.  Still, I ate reasonably well – a simple breakfast of lean canadian bacon, some slices of low-fat cheese, and a fresh peach with some iced tea for breakfast, and a lean sirloin hamburger with some low-fat cheese and blue dressing for dinner.  I made some string beans in the beef fat, and tossed in a clove of garlic for flavor – yum!  My snack later will probably be comprised of a small amount of protein, but mostly fresh and raw fruit or veggies.  I only had about three cups of those today, and I want to make sure I eat at least four or five different for variety when I can.  Not always successful, but I try, at least.

Goals for the rest of the week:  drink more water every day.  Pack more stuff.

My first in a (hopefully) long series of posts chronicling my weight-loss restarting on the low carb plan.  So, I suppose, a brief introduction is in order, eh?

I am not just a little overweight, but extremely so.  My highest recorded was 550.  I gained and lost between there and 300 pounds for what seemed like ages.  Three major abdominal surgeries sort of kicked the weight loss in the teeth, and also caused me to find excuses for not doing the one thing that was responsible for my success – a diet with an emphasis on fresh vegetables and lean meats.  Low carb, effectively.  Back up to over 400 pounds, enough was enough with the bread and stuff.  It wasn’t worth it anymore.  With the prospect of moving to North Carolina soon following a divorce among other circumstances, no time like the present of getting back into shape.

My goal is to lose weight safely, and to permanently change my lifestyle to facilitate it not returning this time.  This means making sure my health is as good as possible, as well as eating properly.  I’m not actually posting on my first day of the diet; I’ve been on it nine days so far.  I am, for those of you interested, following the Protein Power version of low-carb.  Without further ado, the embarassing numbers:

Weight: 379

I don’t know that it’ll be useful for me to update my weight each day.  We’ll see!  I’ll try to keep current with what I’m eating, and how things are going, though!
